I had some leftover salmon and decided to make these simple but gormet flavours salmon patties . They were sooooo good I had them 2 nights in a row 🤭
You can also use 2 cans of tuna and create the same meal .
I had half a small salmon aprox 1 cup when chopped up after cooking .
I used coconut oil for frying the onions and garlic first . Set them aside and use that same oil to cook the salmon in.
Salt pepper garlic powder and a tsp of Madras yellow curry . Sprinkled over salmon to taste.
*While salmon was cooking I made my quinoa.
And added some leftover chicken broth .
( I freeze my broth in 1/2 cup servings in ziplock bags to add as a lovely flavour boost to rice , stirfy sauces ect )
In blender I added 1/2 c of *coconut milk
I used canned chipotle peppers . 1 pepper and 1 tablespoon of sauce . For a mildly -med spice.
( I also divide these cans into 1-2 peppers portions and freeze in bags)
1/4, cup diced strawberries
1 .5 tsp of honey .
If you just use coconut milk you have to blend it on high and almost get it to a whipped consistency.
** You. Can use 1/2 c mayonnaise instead of coconut milk or mix half and half to get a thicker sauce .
When your quinoa is ready have your roughly chopped up salmon in bowl .
Add your sauteed garlic and onions
A tablespoon or rice or regular flour
1.5 -2 cups of quinoa
Mix together.
Have oil in pan warmed up on medium heat .
Form into balls then press like patty.
Cook them for about 4 min on each side or until golden brown.
Then I just added a greens salad with a simple balsamic reduction dressing
Chipotle strawberry sauce on top
And your done !
