One of my favorite comfort foods ! Yumm! Scratch garlicy, white cheesy creamy sauce , a little bit spicy with nutmeg undertones. Grilled asparagus broccoli a dollop of baked sweet potato. Knocks it out of the park ! Buttery Prawns and scallops with a touch of dill . It's 👿 good 😁

Adjust to your flavour preferences.
1.5 cups ( I use lactose free cream) if you find sauce gets too thick,or for even greater flavour depth add some veggie or chicken broth
Butter /coconut oil for frying . (I combine the 2. For the flavour of the butter and healthier benefits of the coconut oil and I don't have to use as much butter)
Tablespoon Flour/ rice flour thickener
Vegetables of choice - ex:cauliflower, broccoli, Brussel sprouts, zucchini...
Chopped shallot /fresh garlic.
**You can make this vegetarian by frying firm tofu chunks.
Spices
Spicy pepper mix (cayenne,black pepper paprika, chili peppers) found one at the dollar store of all places! I love.
Salt
Garlic powder
Few shakes of nutmeg
Dill
I like to use cast iron pans for extra flavour. I start grilling my vegetables with a couple tables spoons of my chopped shallot and garlic mix, in butter and coconut oil. Until they are just softening. Yet still a little firm . Set them aside in a bowl .
Add garlic/scallion mix . Save a tablespoon or 2 aside for sauce.
Salt ,pepper * few shakes of dill or fresh dill & garlic powder to butter/oil on medium heat.
Then add (tofu) or for seafood version - scallops and prawns. (Cook timing to size -don't over cook )
Set aside in bowl .
This is the layering of flavours in the cast iron pans.
Add another approx tablespoon or 2 of oil/butter blend salt /pepper
Last of chopped garlic/scallions
Satay on medium for a couple minutes.
Slowly add cream about a 1/4 cup at a time
Whisk in thickener (flour )
Cook on medium heat keep whisking
As it thickens keep adding more cream
A few shakes if nutmeg
Boil noodles set aside when starting the cream sauce.
When sauce is done transfer from pan to a measuring cup.
Take some of the cream sauce and toss over noodles
In same pan quickly toss the veggies and (tofu) seafood mixture .( Medium heat still the pan will still be hot from cooking sauce )
This will gently reheat and also add a glaze of flavour over veggies and seafood .
Plate - add noodles, mixture and then pour desired amount of sauce over top.
If you really want to add extra flavour add favorite aged cheese to top it off !
We don't count calories with this dish ;) it's all about the creamy goodness and layers of flavours.
